Hello everyone! September is here, and we’re welcoming it with a fantastic new refreshing recipe. We’re bringing you a quick and easy recipe which gives you a bowl full of wellness and a lot of flavour using fresh herbs, tomatoes and cucumbers. Moreover to those who it applies, this recipe is 100% gluten free; for the extra step you can even make it dairy free by skipping out on the feta cheese.
We do recommend an alternative to feta cheese and that is halloumi cheese. It’s a cheese originating from Cyprus and it can be diced up into cubes and fried in a frying pan prior to mixing it in our salad. It’s a very unique cheese specially imported and also a fun fact: halloumi cheese is in the register of protected designations of origin (which pretty much means it’s trademarked to Cyprus). More on that in another future Halloween recipe we’ll be sharing in October.
Without further ado, let’s get to business!
Ingredients
- 2 med cucumbers – cut into 1/2 inch pieces
- 1 cup baby tomatoes – halved
- 1/4 cup red onion – sliced
- 1/4 tsp salt & pepper – each
- 1 tbsp parsley fresh – chopped finely
- 1 tbsp oregano fresh – chopped finely
- 1 tbsp basil fresh – chopped finely
- 1 tsp minced garlic
- 1 tbsp red wine vinegar
- 2 tbsp cannabis oil
- 1/2 cup feta fresh – crumbled
Instructions
We’re going to blend our cucumber pieces along with our baby tomatoes, red onion, salt and pepper into a large bowl, mix well and let it rest for 10 minutes. Afterwards we will be stirring the mixture and adding our basil in as well as our parsley, oregano, vinegar, garlic and our cannabis-infused oil. Stir well and let it marinate for another 5-7 minutes; we want all the flavours to blend in and beautifully compliment each other. If you are using feta cheese, after it marinated you can throw the crumbles of feta cheese on top of the salad. If you were feeling adventurous and tried our halloumi idea, this is where you throw the cubed grilled halloumi in the salad and stir one last time in order to evenly spread it throughout.
